Cherry cake with amaretto for a lazy Saturday

bowl of cherriesSummer is finally arriving in Rome, and half the neighborhood seems to have gone to the beach. Very quiet afternoon out there. We have dusted off the standing fans (essential for surviving the approaching heat) but baking is still bearable, so time to do something with that bag of cherries. Soon it will be too hot for baking, except for baking bread of course.

70g butter, melted and cooled
500g cherries, washed and pitted
2 eggs
1/2 cup sugar
1/4 tsp salt
200g plain flour
1 tsp baking powder
1 tsp vanilla extract
1/3 cup milk
30 ml Amaretto (optional)

Heat the oven to 200C. Lightly butter a 24cm springpan form with a little of the melted butter. Layer the pitted cherries at the bottom of the pan. I added a few leftover strawberries as well.

Whisk eggs and sugar, then add milk, vanilla extract and the melted and cooled butter. Stir in flour, salt and baking powder. Add a splash of Amaretto, if you wish. Most of the alcohol evaporates during baking, but the background note it provides is rather nice.

Spoon the cake mixture over the cherries and bake 30 minutes at 200C, middle rack of the oven, until it looks golden and a cake tester comes out clean.

Let it cool a bit before slicing. Enjoy with a nice cup of tea. Listening to cricket in the background is optional (apparently England are playing Australia…..). Oh, I do love a lazy day like this. I hope you’re having a lovely weekend as well.
